Description: One of the three varieties of cinnamon used to make the dried cinnamon spice so beloved in the kitchen! Excellent container plant! The aromatic oils in cinnamon are become much bolder after the leaves, stems or bark are dried - but the fresh leaves are also used in cooking and we love adding these to hot apple cider!
Cassia cinnamon is used in Indian cooking, often called Indian Bay Leaf, which causes Cassia to be confused with the Mediterranean herb, Laurus nobilis or Bay Leaf. The flavours of these two spices are completely different.
